Yummy is the word for these blueberry muffins. The crumble on top plus the zest of lemon makes them melt in your mouth special. The cardamom spice is also one of the main ingredients in chai tea. You might serve them together at your next Poetry Teatime.
Blueberry Muffins with Cardamom Crumble
Cardamom Crumble
3 tablespoons flour
1 1/2 tablespoons sugar
1 1/2 tablespoons brown sugar
½ teaspoon ground cardamom
Pinch of salt
1 1/2 tablespoons cold, unsalted butter, diced
Muffins
7 tablespoons butter
1/3 cup + 1 1/2 tablespoons yogurt
Zest from 1 lemon
2 medium eggs
½ cup + 2 tbsp sugar
1 ¼ cups flour
2 teaspoons baking powder
Pinch of salt
1 cup blueberries, fresh or frozen
