Tis the season for hot cross buns! They make a great Poetry Teatime treat for spring. Some recipes call for a white icing that cris-crosses the buns. One recipe calls for slashing the buns in a cross with a knife and then putting an egg wash on them. No matter what, they are yummy and not too sweet.

Hot Cross Buns

4 c. flour
3 T. sugar
2 eggs, beaten
1/2 c. raisins
2 c. milk
2 tsp. yeast
1 tsp. mixed ground cinnamon, nutmeg, cloves
1 stick butter

Sift flour and ground spices into a large bowl. Melt butter in warm milk. Soak yeast in a little warm milk with a little sugar until frothy (10 min.) then mix well with rest of milk and melted butter. Make a well in the flour then pour in liquid. Mix lightly to soft dough. Cover bowl with damp cloth and leave for 1-1/2 hours for dough to rise. 

Now blend the beaten egg and raisins into the dough. Leave to rise again for 30 minutes. Knead lightly, shape into about 16 round buns, then place on a lightly greased baking tray. 

When risen (about 20 min.) mark with cross made from dough of flour and water. Place in 400 degree oven for 10 - 15 min. While still hot brush with glaze made from 2 T. sugar boiled with 2/3 cup of water. Cool on wire tray.
