Clementine Cake

This delicious cake tastes even better on the second day so it can be prepared ahead of time for a Poetry Teatime. Check out the recipe below. Plus we share poetry books about fruits and veggies!

Clementine Cake

375 grams clementines (about 5)
6 large eggs
1 cup white sugar
1 1/4 cup ground almonds
1 teaspoon baking powder

Find the recipe on Nigella Lawson's website where she promises that this cake is easy to make and says that "even if you're stressed out, it won't topple you over into nervous collapse." Sounds perfect for the busy parent, doesn't it?
